Zezty Tilapia and Green Polkadots

 I been doing a lot of driving lately so I decided to learn more about food and fitness. I've been listening to Vinnie Tortorich and he recommends eating foods that are low-glycemic. So tonight I made a low-glycemic, amazingly delicious dinner. 
Boiled Mashed Sweet Potatoes
Zezty Cilantro Tilapia with Mango Salsa
Asparagus

Did you know that sweet potatoes are low glycemic?  But if you bake them in the oven the sugar is brought out and the glycemic index is higher. So boil them and make them into mashed sweet potatoes and the glycemic index stays low. What are some of your favorite low glycemic foods?

Here is a cute lil number at a fun boutique up the street from my house. I had to contain myself because I swear to you I could have bought the whole store! Kyle wouldn't have liked that ;) The back of this gorgeous top goes practically to my knees, which I know is "totally in right now" but I have to tell you, I think it looks really stupid so I tied it up in a knot and tucked it under itself to create more of a shirt and not a drapery.  Hope you like it!

25 years later


Celebrated my 25th birthday yesterday. July 12th. How did you feel when you turned 25? Not gonna lie...I cried a little, okay maybe a lot. I think back to my last 25 years of life and all that I've experienced, accomplished and who I am today. I've always been the youngest. Youngest in my family, among my friends, and in school since my birthday is in the summer. Now that I'm 25 I really don't feel "young" anymore. I feel like I'm officially an adult. I'm excited and a bit overwhelmed for what the next 25 years will bring. And after a great day of pampering, shopping and an amazing dinner  I am proud to be getting older.

So here's the thing. I love the Circus. I've only been once, well once that I can remember. When I turned 16 a cute, nice boy asked me out and we went to the Circus. So much fun! If you are looking for an exfoliate that is gentle enough to use everyday and provides overnight results, look no further!  Introducing the most amazing exfoliating face and body wash. It is my new favorite because it smells like fresh citrus squeeze and the jojoba beads helps unclog my pores. It's a bit pricey weighing in at $36 at Sephora but I think you definitely get the bang for the buck as some would say because you can use it as a body wash as well.  I can't wait to try some of HIS other products!

 But tell me, What is your favorite face wash to remove eye makeup? I'm using these. One for the shower and one for the bathroom counter. I like them both but I'm not attached, so I'd love your feedback.

Magleby's Chocolate Cake.

There is a restaurant found in Utah called Magleby's. It possesses the most moist delicious chocolate cake on the planet. Now don't be too shocked... but I am not a lover of chocolate. Chocolate is usually too rich for my tastebuds and I even had a moment in my lifetime where I would pick out the chocolate chips in chocolate chip cookies. It's sad, I know. But as I'm sure you would all agree, when a big slice of chocolate cake is sitting in front of you and you can invision your fork gliding through it without a crumb falling to the plate, you know you must have a piece.

 And that it how it is with Magleby's Chocolate Cake. There is a problem though.  I don't live in Utah. And when I bake, I want others to experience my goods the way I experienced Magelby's Chocolate Cake. So I did some research, well actually I saw a commercial and my problem was answered. I've always wanted to know the secret to how Magleby's gets their chocolate cake so perfectly moist and I figured it out this weekend when I baked the most amazingly moist, delicious chocolate cupcakes with this Buttercream Frosting.  Are you ready for the secret ingredient, that really isn't that much of a secret but hey here it is anyway!

Now my next hunt is to find a Gluten/Dairy free version since I am trying to live a dairy free diet after finding out my allergies to Eggs, Milk and Yogurt. Let me know if you have one that you love! Happy Baking!
